The Metz kitchen is led by Executive Chef Courtney Hill, and Sous Chef, Samara Digney who work closely with each season’s bounty, to ensure sustainability of produce and the ability to support local growers, producers and farmers. They utilise the highest quality produce to create inspired modern and flavourful food, while catering to a wide range of dietary requirements.
